Valentine’s Day is all about celebrating love, and what better way to do so than with a batch of Cute Valentine’s Day Cupcakes? These cupcakes are the perfect combination of elegance and sweetness, making them ideal for surprising your partner, sharing with friends, or even treating yourself!
Ingredients:
For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (room temperature)
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
For the Red Icing (Buttercream Frosting):
- 1/2 cup unsalted butter (room temperature)
- 1 1/2 cups powdered sugar
- 2-3 tbsp heavy cream (or milk)
- 1 tsp vanilla extract
- Red food coloring (gel or liquid, depending on preference)
- Pinch of salt
For Decoration:
- Small white heart-shaped sprinkles
- 1 large heart-shaped candy (like a big red or pink chocolate heart, or a decorative sugar heart)
Instructions:
1. Make the Cupcakes:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat together the butter and sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, beating well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture in three parts, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
- Divide the batter evenly between the 12 cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
2. Make the Red Buttercream Frosting:
- In a large bowl, beat the softened butter until smooth and creamy, about 2 minutes.
- Gradually add the powdered sugar, one cup at a time, mixing until fully combined.
- Add 2 tablespoons of heavy cream (or milk), vanilla extract, and a pinch of salt. Beat until smooth and fluffy.
- Add red food coloring a little at a time, mixing until you reach your desired shade of red. Start with just a drop or two, and build it up if you want a deeper red color.
3. Decorate the Cupcakes:
- Once the cupcakes are completely cooled, use a piping bag fitted with a large round tip (or a ziplock bag with the corner cut off) to pipe a generous swirl of red buttercream frosting onto each cupcake.
- Lightly sprinkle the top of each cupcake with small white heart-shaped sprinkles.
- Carefully place one large heart-shaped candy (such as a red chocolate heart or a sugar heart) on top of each cupcake as the centerpiece.
