Ingredients
For the Shrimp Pasta:
- Shrimp: 1 lb, peeled and deveined
- White wine: ½ cup
- Fresh cream: 1 cup
- Green peppers: 1, thinly sliced
- Mozzarella cheese: ½ cup, shredded
- Italian parsley: ¼ cup, finely chopped
- Rosemary: 1 tsp, chopped
- Garlic: 3 cloves, minced
- Olive oil: 2 tbsp
- Butter: 1 tbsp
- Salt and pepper: to taste
- Chili flakes: ½ tsp (optional, for heat)
- Pasta: 12 oz (store-bought or homemade; recipe below)
For the Parmesan Crisp Roll:
- Parmesan cheese: 1 cup, finely grated
- Ground black pepper: a pinch
Instructions
For the Parmesan Crisp Roll:
1. Preheat your oven to 375°F (190°C).
2. Line a baking sheet with parchment paper.
3. Spread the grated parmesan cheese in thin, even circles (about 4–5 inches wide) on the parchment paper. Sprinkle with black pepper.
4. Bake for 5–7 minutes, or until the cheese is melted and golden brown.
5. Remove from the oven and, while still warm, carefully roll each circle around the handle of a wooden spoon or similar object to create a roll shape.
6. Let the rolls cool and harden, then set aside for topping.
For the Shrimp Pasta:
1. Cook the shrimp: Heat olive oil and butter in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook for 2–3 minutes on each side, until pink and opaque. Remove and set aside.
2. Sauté the aromatics: In the same skillet, add the minced garlic, green peppers, and rosemary. Cook for 2 minutes until fragrant.
3. Deglaze with wine: Pour in the white wine, scraping the bottom of the skillet to release any bits. Let it simmer for 2–3 minutes to reduce slightly.
4. Make the sauce: Lower the heat to medium. Stir in the fresh cream and mozzarella cheese, letting the cheese melt into a creamy sauce. Season with salt, pepper, and optional chili flakes.
5. Combine everything: Add the cooked shrimp back to the skillet, then toss in the cooked pasta. Mix well until the pasta is evenly coated in the sauce. Stir in the chopped parsley.
6. Garnish and serve: Serve the pasta in bowls, topped with a parmesan crisp roll for a fancy finishing touch.
